Shining a Light on Sustainable Dining: The Solar-Powered Restaurant Le Présage

In the heart of Chutes-Lavie, Marseille, a culinary revolution is taking place at Le Présage, Europe's first solar-powered restaurant. Founded by Pierre-André Aubert, a former aeronautical engineer turned chef, and his partner Benjamin Leroy, Le Présage is not just a dining establishment—it's a beacon of innovation and sustainability in the gastronomy world.





Using a half-parabolic "Solar Brother" solar oven, Le Présage cooks up delectable vegetarian dishes, such as creamy polenta, mushroom bourguignon with broccoli, and poached pear with chocolate, all infused with the unmistakable flavor of solar energy. Chef Pierre-André Aubert's commitment to harnessing the sun's energy stems from a desire to "push the concept further" and utilize the "obvious energy" of the sun in culinary endeavors.


Le Présage's relocation to the "tiers-lieu des transitions" underscores its dedication to driving the food transition movement. While originally intended for Parc Borély to attract tourists during the Olympic Games, technical constraints led the restaurant to Chutes-Lavie. However, plans are underway for a permanent establishment in Château Gombert, complete with two solar ovens and a permaculture vegetable garden.


The restaurant's commitment to sustainability extends beyond solar cooking. Le Présage partners with organizations like Geres and Après M to exchange best practices and reduce waste through innovative methods like methanization. Additionally, the owners plan to share their solar technology with chefs worldwide, fostering a global community of eco-conscious culinary innovators.
